Position Overview

The Chef plays a critical role in the Momo Bar kitchen's daily operations, ensuring the consistent delivery of high-quality dishes across dine-in, takeaway, and delivery services. This position requires a strong commitment to food quality, hygiene, kitchen management, team leadership, and customer satisfaction. The role also involves supporting menu development and upholding all health and safety protocols.

Key Responsibilities

Food Preparation & Service:

  • Prepare and cook all menu items to company standards with speed and precision.
  • Oversee food presentation and ensure dishes meet visual and taste expectations.
  • Manage lunch through dinner service, ensuring order accuracy and portion control.
  • Develop and test new dishes in collaboration with the Head Chef or GM.

Kitchen & Stock Management:

  • Maintain optimal stock levels; conduct stocktakes and order supplies as required.
  • Check and receive deliveries; ensure proper storage and stock rotation.
  • Manage fridge, freezer, and dry storage cleanliness and organization.
  • Ensure all ingredients are prepped, stored, and used in compliance with food safety standards.

Leadership & Staff Management:

  • Train and supervise junior kitchen staff and cooks.
  • Allocate tasks and ensure stations are clean, stocked, and running efficiently.
  • Manage kitchen rosters across locations; handle shift planning and changes.
  • Support team onboarding and ongoing skill development.

Hygiene & Safety Compliance:

  • Uphold all OH&S, HACCP, and food safety regulations.
  • Maintain high standards of kitchen hygiene at all times.
  • Sanitize surfaces regularly and enforce hand hygiene practices.
  • Ensure all policies relating to sick leave, uniforms, meals, and kitchen procedures are followed.

Technology & Systems:

  • Use Deputy for rosters, communication, timesheets, and availability.
  • Ensure all staff meals are processed through Kounta correctly.
  • Follow Momo Bar's procedures for opening/closing, reporting, and system use.

Skills & Qualifications

  • Proven experience in a fast-paced kitchen environment.
  • Strong leadership and communication skills.
  • Culinary qualification or equivalent experience preferred.
  • Sound understanding of food safety and hygiene regulations.
  • Ability to work across multiple shifts, including weekends and holidays.

Salary

$72,000 - $75,000 annually (based on experience and qualifications)
