Position Summary
Elizabeth Andrews Catering is expanding its culinary team and launching a premium sushi offering across our Events Department while also strengthening our corporate catering menu. The Sushi Sous Chef will help shape and deliver this new direction, ensuring our sushi program reflects the quality, creativity, and attention to detail EA is known for.
This role is hands-on and focuses on producing exceptional sushi for corporate orders, large functions, and live sushi stations. You'll work across varying schedules and catering volumes to deliver consistency, innovation, and high standards across all sushi production.
Key Responsibilities
Sushi Production & Execution
- Prepare high-quality sushi, sashimi, nigiri, maki, and modern Japanese dishes for daily orders and event menus.
- Maintain strong knife skills and expertise in fish preparation and seafood handling.
- Ensure consistent presentation, portioning, and product quality.
- Plan and manage prep and production based on catering schedules.
- Work with premium ingredients and ensure seafood is stored, handled, and rotated correctly.
Event Delivery & On-Site Service
- Lead sushi preparation and service at off-site events including corporate functions, weddings, VIP events, and live sushi bars.
- Assist with set-up, pack-down, and coordination of sushi stations.
- Represent EA with professionalism when dealing with clients, guests, and event teams.
Menu Development & Innovation
- Work with the Executive Chef to design and refine premium sushi menus for events and corporate catering.
- Create new items, seasonal variations, and bespoke offerings that elevate the EA experience.
- Support recipe development, costing, portion control, and plating guidelines.
Leadership & Coordination
- Assist the Executive Chef in overseeing sushi production and guiding junior staff.
- Train team members in sushi techniques where needed.
- Manage stock ordering, rotation, and storage for sushi ingredients.
- Collaborate with other kitchen sections to support smooth event and catering delivery.
Food Safety & Compliance
- Maintain strict food safety standards, particularly around raw seafood.
- Follow EA's allergen procedures, temperature checks, and HACCP requirements.
- Uphold strong hygiene and workplace safety practices across all sushi and event activities.
Key Skills & Qualifications
- Minimum 3 years' experience as a Sushi Chef, Sushi Sous Chef, or senior sushi role.
- Advanced knife skills and strong knowledge of sushi and Japanese cuisine.
- Demonstrated experience in high-volume catering, fine dining, hotels, or premium events.
- Strong knowledge of food safety, seafood handling, HACCP, and allergen protocols.
- Ability to work flexibly based on event schedules, including early mornings, late finishes, or weekends as required.
- Creative, innovative and passionate about delivering beautifully presented sushi.
- Strong communication skills and a positive, collaborative working style.
