Bistro Morgan is one of Melbourne's most loved bakeries, known for our playful creativity, wholesale partnerships, and strong retail presence. From doughnuts and scrolls to muffins and cookies, our Bakehouse supplies our stores, wholesale clients, and national retail partners at scale. We are now looking for an experienced Production Manager to lead our Bakehouse team and oversee day-to-day operations.

About the Role

As Production Manager, you'll be responsible for managing all aspects of our Bakehouse production. You will oversee a growing team of bakers, pastry chefs, and assistants, ensuring that every product meets our quality standards, is produced efficiently, and delivered on time. This role requires strong leadership, attention to detail, and the ability to manage both people and systems in a fast-paced, high-volume environment.

Key Responsibilities

  • Manage day-to-day production schedules across doughnuts, scrolls, muffins, cookies, and new product lines.
  • Lead, motivate, and train production staff to uphold consistency, efficiency, and workplace culture.
  • Monitor and control ingredient usage, portioning, and wastage to achieve COGS targets.
  • Work closely with leadership to meet wholesale and retail demand, scaling production as needed.
  • Maintain compliance with food safety and quality assurance systems.
  • Oversee inventory management, ordering, and supplier coordination.
  • Collaborate with the R&D team on new product development and launches.
  • Drive operational improvements, including workflow efficiency, equipment maintenance, and staff scheduling.
