For generations, Florentino has stood at the heart of Melbourne dining, a cornerstone of the city's food and wine culture and steeped in tradition.This next chapter of the Florentino Dining Room will honour Melbourne's culinary heritage while ushering in a bold new era.
We Are
Established in 2013 edition is a dynamic and growing hospitality group. Dedicated to delivering forward-thinking hospitality experiences to the Australian dining scene. We prioritise attention to detail, and the exceptional treatment of both our Guests and Team Members.

The Opportunity
We are currently seeking a professional and experienced Head Chef to lead the team upstairs in the Florentino Dining Room.
Reporting to our Executive Chef, Brendan Katich, and working closely with Culinary Director, Michael Greenlaw, this role will see you developing and executing an elevated interpretation of classic Italian cuisine, reimagined with modern technique . You will oversee all kitchen operations, collaborate closely with front-of-house management, and build and lead a high-performing kitchen team.
This is an exciting opportunity to take the helm in one of Melbourne's most historic dining rooms during a pivotal period of growth at edition. We are looking for someone who is passionate, innovative, and driven.
Our ideal candidate will have
- Proven experience as a Head Chef or Senior Sous Chef within a premium, hatted or michelin starred restaurants
- Strong knowledge of traditional and contemporary Italian cuisine
- Demonstrated ability to lead, mentor and develop a high-performing kitchen team
- Excellent organisational skills with experience managing kitchen operations, ordering, stock control and food costing
- A commitment to maintaining exceptional standards of quality, consistency and presentation
- Strong collaboration skills, with the ability to work closely with front-of-house leadership to deliver a cohesive guest experience
- A passion for seasonality, sustainability and working with premium local produce
- Experience developing and implementing new dishes, menu cycles and culinary concepts
- A calm, consistent leadership style with the ability to perform under pressure
- A genuine desire to contribute to the evolution and success of an iconic Melbourne dining room
