The Opportunity

We are seeking an experienced, creative and driven Head Chef to lead the kitchen, under our Executive Chef. Our signature venue is all-day European bistro-style concept.

As Head Chef, you will:

  • Develop and execute a distinctive, contemporary all-day menu (breakfast, lunch, dinner) featuring European bistro classics (think steak-frites, pasta, refined comfort dishes) with a signature Mulberry twist.
  • Lead and build a high-performing kitchen team, overseeing recruitment, training, rostering, performance and culture.
  • Operate with a strong hospitality ethos, delivering consistent excellence in food presentation, taste, and service aligned with the broader group's standards.
  • Collaborate closely with front-of-house leadership, the hotel operations team, and the Mulberry Group executive team to align kitchen operations with venue strategy and guest experience.
  • Manage kitchen operations: costing, budgeting, menu engineering, inventory control, vendor relationships, HACCP and food safety compliance.

About You

  • You bring substantial experience as a Head Chef or Senior Sous Chef in a high-volume, premium venue (4- or 5-star hotel, hatted venue, and/or large scale restaurant, or major hospitality group).
  • Strong culinary identity: ideally with experience in European/modern bistro cuisine, comfortable across the day, (breakfast through dinner).
  • Proven ability to lead a team, inspire positive culture, develop talent, and manage operations to a high standard.
  • Commercial mindset: you understand food costs, waste control, margin, and how to balance creativity with profitability.
  • Passion for hospitality, guest-centric service, and building something exciting and new in Melbourne's food scene.
