TAFE Queensland has recently opened a new vertical campus at Robina on the Gold Coast which is committed to embedding sustainability into all its operations. The campus has already won international awards and is recognised as one of the leading sustainable vocational institutions in Australia. Our stunnng Robina campus is home to four industry leading commercial outlets; Robina Events Centre (REC), Green Fields Bar and Restaurant, Seedpod Café and TQ Fitness.

**Robina Events Centre (REC)**: Sustainability is at the forefront of everything we do, and we strive to incorporate eco-friendly practices into every function we host. REC is an exceptional collection of modern conference spaces that provides highly professional services for a variety of event types, with the room capacity able to seat up to 300 people.

**Green Fields Bar & Restaurant**: Robina's only rooftop restaurant & bar, with breathtaking scenic hinterland views, offers a healthy dining experience in a modern venue, leaning into innovative menus inspired by sustainability. This venue has already placed in the “Top 10 Gold Coast dining locations” twice in three months, compared against over 400+ Gold Coast dining outlets Our innovative menu and the design of the restaurant is inspired by sustainability, which is reflected in the quality of our locally sourced produce. Our memorable dining experience is offered at an affordable price.

**Seedpod Café**: a vibrant and lively café surrounded by scent filled garden beds, it boasts delicious coffee & sustainable produce and has a focus on sustainable operations and initiatives.
Your Key Responsibilities
- Ensure financial profitability, growth and success of the commercial outlets (event centre, restaurant and café) including:

- Maintain effective profit and loss controls including analysis and review of customer demand patterns that drive staff rostering and efficient management of labour costs
- Develop and monitor budgets for the café, restaurant and event space.
- Maximise food and beverage sales, working with the Sales and Events Coordinator to develop a sales strategy and implementation plan.
- Ensure the successful delivery of events for both external clients and internal TAFE Queensland events, communicating with kitchen and service staff, security and logistics staff as necessary.
- Work with the Sales and Events Coordinator to develop standard event packages.
- Prepare costings and menus with the Head Chef for standard and customised packages.
- Manage the day to day operations of the commercial outlets, including:

- Lead the F&B team and build a team culture in line with TAFE Queensland values by being hands-on in all aspects of the food and beverage operations, providing coaching and guidance to the team and ensuring a high level of staff engagement.
- Maintain customer satisfaction by ensuring timely management of enquiries and complaints and by seeking and responding to feedback.
- Maintain health and safety standards, including HACCP requirements.
- Set up and maintain processes and reports to: monitor customer satisfaction, manage stock and wastage ensure high standards of quality control and maintain operational efficiency.
- Identify, lead and model the ongoing training and development of staff.
- Work with the Director of Faculty to ensure that the outlets provide ability for seamless student work experience opportunities, providing high quality learning outcomes whilst maintaining commercial viability and an excellent customer experience.
- Establish and maintain relationships with external providers and negotiate competitive pricing and terms of trade.
- Consider the United Nations Sustainability Development Goals (SDGs) in all aspects of management and service delivery, including but not limited to sourcing food, ensuring the quality of produce, and reviewing the supply chain.
- Model and actively promote an ethical and safe work environment that supports a culture of best practice regarding health, safety, wellness and sustainability.

This is a Permantent, Full-Time position and you will be required to work outside of normal business hours, shift work, including evenings, weekends and where applicable Public Holidays. Appropriate shift allowances will apply.
