Sydney-based hospitality group, Liquid & Larder, is seeking an experienced, charismatic butcher to lead our in-house butchery at Alfie’s.

**About Alfie’s**:
Entering via the Open-air Terrace and Bar, guests are welcomed into a casual setting serving Sydney’s coldest martinis, crisp draught beer, and a world-class wine list. At the rear, the Dining Room is where the energy intensifies. The space feels like theatre, sounds are sharp, the art distinct, and meat is prepared in full view, bathed in the red glow of the dry-age cabinet. It’s fresh, bold, and electric in atmosphere.

Alfie’s is also home to our in-house butchery, where we prepare and age the beef served across all six of our venues.

**About the Role**:
The Butcher is responsible for the smooth day-to-day running of the in-house butchery. This includes receiving and dispatching all proteins for the butchery and across Liquid & Larder venues, managing stock rotation to meet aging requirements, and overseeing effective waste management of all meat products.

This is a hands-on role that requires strong attention to detail, a commitment to quality, and a practical, team-focused approach. Some driving and delivery of produce between venues may also be required.

**Your Day to Day**:

- Ensure wastage is in line with target and documented correctly
- Butchery of meat for company venues
- Pack and deliver all meat orders for venues
- Ensure correct maintenance processes are followed for all equipment and general kitchen working surfaces and areas
- Ensures staff receive on the job training to the agreed standards of performance and have all necessary skills required by their role within the butchery
- Ordering done to specifications

**About You**:

- Proven experience in butchery
- A confident and calm demeanour
- High attention to detail and a genuine passion for butchery
- Strong organisational and communication skills
- Strong attention to detail and food safety standards
- Ability to work efficiently in a production setting
- Full NSW Driver’s License
