The 25hours Hotel The Olympia is the first 25hours in Australia, located in the vibrant suburb of Paddington in Sydney. The building itself was formerly a popular cinema, which opened in 1911 and reflects its rich history throughout the guest experience.

The hotel has 109 rooms on six floors and will feature event and meeting areas, an iconic London restaurant, The Palomar, a coffee house featuring the popular Baker Bleu pastries, a cozy cocktail and wine bar and **rooftop bar Monica** with city skyline views. The ground floor outlets are in collaboration with award-winning London-based creative hospitality studio, Studio Paskin. A new era awaits at the 25hours Hotel The Olympia which will shape and transform Paddington, welcoming a vibrant and diverse team, bringing its vision to life.

As **Bar Manager**, you’ll have the rare chance to shape one of Sydney’s most anticipated new venues from day one — curating the drinks program, building a passionate team, and setting the standard for unforgettable hospitality.
**Job Description** This is your opportunity to set the scene**
- Lead the opening of Monica’s rooftop bar — from setup to full swing.
- Design and develop a standout beverage program that blends timeless elegance with modern edge.
- Build, train, and inspire a team of bartenders and floor staff who share your passion for exceptional service.
- Establish smooth, efficient bar operations — from stock control and supplier relationships to daily service and compliance.
- Create an atmosphere that’s warm, stylish, and buzzing with good energy, day to night.
- Collaborate closely with the Head Chef and hotel leadership to align the guest experience across the venue.
- Stay ahead of trends while staying true to the Monica brand — always innovating, never compromising on quality.
- Be the face of the bar — welcoming regulars, connecting with the community, and setting the tone for service.

**Qualifications** We’re looking for a host, leader, and drinks visionary in one**:

- You’ve managed premium bar operations before, ideally with experience in openings or rooftop concepts.
- You’re a creative mind with deep knowledge of spirits, cocktails, wines, and all things beverage.
- You know how to lead a team with heart, purpose, and professionalism.
- You’re as strong on the floor as you are behind the scenes — from guest engagement to stock and cost control.
- You bring energy, organisation, and a “can-do” spirit that sets the vibe from the top.
