Cellar Door Manager

- Managing and leading the Yarra Valley Cellar Door operation to achieve sales targets,

goals and customer satisfaction
- Promoting the De Bortoli brand by providing an experience that showcases the heritage and

passion of the family

Leading an organisational unit or Department. Providing leadership, mentoring and
supervision of others.

**Supervises**:
Cellar Door Staff

**Main Functions and Activities**

**General Shopkeeping and daily administrative duties**
- Oversee the daily running of Cellar Door and staffing requirements
- Ensure Cellar Door and associated areas (outside toilets, cellar door entry, carpark,
- gardens) are clean and ready for service.- Maintain a welcoming, visually appealing and clean Cellar Door
- Ensure Cellar Door is always well-stocked with well appointed Merchandising and
- displays.- Provide an interesting selection of wines on tasting
- Manage tasting stock
- Maintain pricing on all products (wine and non-wine) in Kounta
- Accurately process customer accounts.
- Ensure end-of-day procedures are undertaken including reconciliation of daily

takings/banking/float

**Development of an outstanding Customer service culture**
Ensure all staff are briefed prior to commencement of service and are aware of their
- roles and responsibilities towards customer service- Meet and greet customers in a friendly professional manner
- Ensure customers leave having enjoyed the De Bortoli Experience
- Professionally handle any customer service issues
- Accurately process customer accounts.
- Contribute ideas/strategies to increase and improve the customer experience at De

Bortoli Cellar Door
**Staff Development**
Maintain a good knowledge of De Bortoli products and services and pass onto staff- Development of staff skills and capability including wine knowledge, sales skills,

customer service
- Develop SWI’s for all aspects of Cellar Door service.
- Provide clear and consistent communication with all staff
- Work with Restaurant Manager to provide cross-training between Cellar Door and

restaurant staff in all areas of food and wine service
- Organise regular staff meetings and educational experiences
- Maintenance of RSA register
- Ensure all staff are briefed on uniform policy and are dressed appropriately

**Maintain financial responsibility and adhere to budgets**
Provide input into setting of budgets and targets in accordance with Direct-To-Consumer

Strategy
- Have a thorough understanding of budgets and expectations and monitor operating

costs in accordance with budgets
- Monitor Cellar Door performance and regularly report on variances from targets and

budget objectives
- Support and motivate staff to meet revenue, profitability and expense targets
- Contribute ideas to increase/improve profitability and actively instigate these ideas

**Business Development, External events and Other Duties**
Participate and support regional wine, food and tourism events in the Yarra Valley
- Work at off-site venues as required and analyse the effectiveness of these promotions
- Assist in other areas of hospitality if required.
- Work closely with Functions and Events Manager to develop ideas
- Participate and contribute to department/ hospitality meetings
- Listed as a contact on Security Firm roster

**Co-management of Melba Wine Club**
Assist in the overall management of Melba wine Club
- Develop member activities/rewards
- Assist with maintaining a calendar of important dates for Club packout and other

activities
- Development of Cellar Door and other staff to promote Melba Wine Club
- Increase sign-ups to Melba Wine Club

**Aligning with National Sales and Marketing**
Align Cellar Door strategy with overall DTC strategy

Cellar Door
**Promote safe attitudes and work practices**
Comply with all WH&S policies and procedures.- Wear Personal Protective Equipment (PPE) as specified.
- Report and investigate near misses and unsafe work practices/hazards to the OH&S
- Manager- Maintain all equipment to a safe working standard. Propose replacement where
- necessary.- Work in a manner which is conducive to OH&S.
- Maintain and encourage sound occupational health and safety practices

**Essential Capabilities and Experience**
- Minimum 5 years of related sales/marketing experience
- Extensive wine knowledge
- Ability to lead/direct a small team
- Honest, reliable, trustworthy, punctual
- Outgoing hands-on attitude.
- Highly developed communication skills.
- Current RSA Certificate
- Passionate about food and wine.
- High standards of dress and grooming
