About the Role - Sous Chef

This is an exciting opportunity to join our dynamic team as a Sous Chef at W Melbourne. As a key member of our culinary team, you will play a vital role in delivering exceptional dining experiences to our guests.

Key Responsibilities

  • Supervise and coordinate the activities of the culinary team to ensure seamless food service.
  • Determine how food should be presented to create visually appealing dishes.
  • Ensure proper portion control, arrangement, and food garnish to meet our high standards.
  • Monitor food quantities and inform the Food & Beverage team of menu updates.
  • Prepare special meals and assist cooks with various tasks as needed.
  • Provide cooks with necessary items and monitor stock levels to maintain a well-stocked kitchen.
  • Maintain kitchen logs for our food safety program and track food products.
  • Ensure the quality of food items and notify the manager if a product does not meet specifications.
  • Responsible for guiding and developing staff, including direct reports.
  • Supervise all kitchen areas to maintain a consistent, high-quality product.

Requirements

  • Experience in a dynamic restaurant setting.

  • Qualifications in Commercial Cookery III and IV or equivalent are preferred.
