About the Role

We are seeking a skilled Demi Chef to join our culinary team at Mercure Brisbane Spring Hill. As a Demi Chef, you will assist the chef in charge to ensure the smooth running of the kitchen, preparing mise en place for all relevant menus, and ensuring consistent great food production in line with the high quality standards set by the Hotel.

Key Responsibilities

  • Assist the chef in charge to ensure the smooth running of the kitchen.
  • Prepare mise en place for all relevant menus.
  • Ensure consistent great food production, in line with the high quality standards set by the Hotel.
  • Ensure that all dishes are prepared consistently and according to standard.
  • Ensure strict stock rotation and minimum wastage, and assist with ordering necessary food items.
  • Comply with all WHS, food safety legislation.
  • Provide a courteous and professional service and ensure that guest feedback are actioned and communicated to the team.

Requirements

  • Have at least 1 year work experience as a Demi Chef working in a hotel or restaurant with high food quality standards.
  • Have the ability to operate various kitchen equipment and practice sound cooking techniques.
  • Completion of Chef Apprenticeship or has a Certificate in commercial cookery.
  • Good food hygiene and safety knowledge, including safe and accurate knife skills.
  • Knowledge and experience in a variety of different cooking methods.
  • Be available to work varied shifts, including early mornings, late evenings, weekends and public holidays.
  • Have the ability to work autonomously as well as within a team.
