The Mercure Brisbane Spring Hill is located on the central city fringe, just minutes from the CBD, Brisbane River, Suncorp Stadium and public transport. Overlooking the city skyline and Roma St Parklands, the Hotel features 179 spacious guest rooms with generous open-aired balconies, modern amenities, an outdoor swimming pool, fitness room, and an alfresco-style restaurant and bar. 


Job Description

Duties and responsibilities include but are not limited to:

Assist the chef in charge to ensure the smooth running of the kitchen. Prepare mise en place for all relevant menus. Ensure consistent great food production, in line with the high quality standards set by the Hotel. Ensure that all dishes are prepared consistently and according to standard. Ensure strict stock rotation and minimum wastage, and assist with ordering necessary food items. Comply with all WHS, food safety legislation. Provide a courteous and professional service and ensure that guest feedback are actioned and communicated to the team.
Qualifications

To be successful in this role, you must:

Have at least 1 year work experience as a Demi Chef working in a hotel or restaurant with high food quality standards. Have the ability to operate various kitchen equipment and practice sound cooking techniques. Completion of Chef Apprenticeship or has a Certificate in commercial cookery. Good food hygiene and safety knowledge, including safe and accurate knife skills. Knowledge and experience in a variety of different cooking methods. Be available to work varied shifts, including early mornings, late evenings, weekends and public holidays. Have the ability to work autonomously as well as within a team.
