We are seeking a highly skilled and passionate Sous Chef/Chef De Partie to join our dynamic kitchen team at Lancemore Hotel Group. As a key member of our culinary team, you will play a vital role in delivering exceptional dining experiences and contributing to the creation of menus that showcase the best of modern Australian cuisine.
Key Responsibilities- Work collaboratively with our kitchen brigade to deliver high-quality food and exceptional service.
- Assist in the development and execution of menus that reflect the seasonality of local ingredients and showcase the hotel's commitment to sustainability.
- Be a hands-on team member, with a strong focus on maintaining high standards in all aspects of kitchen operations.
- Ensure compliance with food safety regulations and contribute to the effective management of kitchen costs.
- Assist the Executive Chef in menu preparation and ensure adequate supplies are available for service.
- Liaise with restaurant team members regarding menu availability, additions, and changes.
- Maintain excellent presentation standards and cost control for all food service delivery.
- Ensure budget management with stock rotation and food wastage.
- Prepare and ensure availability of mise en place as required.
- Keep all working areas clean and tidy and ensure health and safety regulations are met.
- Ensure all equipment is maintained, serviced, and cleaned.
- Assist with preparation of rosters, ensuring suitable and cost-effective employee levels are maintained.
- Escalate any issues or concerns to the Head Chef as required.
- Relevant qualifications in Commercial Cookery.
- Proven experience in a high-end or luxury dining environment.
- Passion for creating memorable dishes that celebrate local produce.
- Thrives in a collaborative team environment and has strong communication skills.
- Takes pride in their craft and has a keen eye for detail.
- Is flexible, adaptable, and ready to be part of a growing, forward-thinking company.
- Enthusiasm and a creative approach to providing high-quality cuisine.
- Demonstrated understanding of Australian food safety and HACCP.
- Well-presented, punctual, and reliable.
- Ability to keep your section clean and organized with a good understanding of workflow and structure.
- Ability to prioritize and work under pressure.
