About the Role:
We are seeking a highly skilled and experienced Sous Chef/Chef De Partie to join our dynamic kitchen team at Lancemore Hotel Group.
Key Responsibilities:
- Work closely with our kitchen brigade to deliver exceptional dining experiences.
- Assist in the creation and execution of menus that change with the seasons, ensuring a fresh and innovative approach to each service.
- Be a hands-on team member, with a can-do attitude, while maintaining high standards in all aspects of kitchen operations.
- Ensure compliance with food safety regulations and help manage kitchen costs effectively.
- Assist the Executive Chef with menu preparation and ensuring adequate supplies are available for expected service.
- Liaise with Restaurant team members regarding the availability of menu items, additions to the menu and any relevant changes.
- Maintain excellent presentation standards and cost control for all food service delivery.
- Ensure budget management with stock rotation and food wastage. Have stock control procedures implemented and maintained.
- Prepares and ensures availability of mise en place as required.
- Keep all working areas clean and tidy and ensure health and safety regulations are met.
- Ensure all equipment is maintained, serviced and cleaned.
- Assist when required with preparation of rosters, ensuring that suitable and cost effective employee levels are maintained at all times.
- Escalate any issues/concerns to the Head Chef as required.

- Relevant qualifications in Commercial Cookery
- Has proven experience in a high-end or luxury dining environment.

- Is flexible, adaptable, and ready to be part of a growing, forward-thinking company.
- Enthusiasm and a creative approach to providing high-quality cuisine
- Demonstrated understanding of Australian food safety and HACCP
- Well presented, punctual and reliable
- Ability to keep your section clean and organized with a good understanding of work flow and structure
- Ability to prioritize and work under pressure
- A passion for quality food and produce
