Head Chef - Pastry

Frontline Retail Melbourne is seeking a highly skilled and experienced Head Chef - Pastry to lead their esteemed pastry team. As a destination that brings together Italian gastronomy, culture, and heritage, their superstore is a hub for both food enthusiasts and professionals.

About the Role

The successful candidate will take ownership of crafting and overseeing the entire pastry offering, managing the day-to-day operations of the pastry kitchen, and ensuring the creation of high-quality pastries, desserts, and baked goods that reflect traditional and contemporary Italian and Western flavors.

Key Responsibilities

  • Lead and manage the pastry team, from recruitment to training and development.
  • Design and execute a seasonal menu that highlights traditional Italian pastries and contemporary creations.
  • Ensure consistency in taste, quality, and presentation across all pastry products.
  • Collaborate with the executive chef and management team to curate special events and catering menus.
  • Maintain high standards of cleanliness, organisation, and safety in the pastry kitchen.
  • Manage stock levels, ordering supplies, and controlling food costs.
  • Stay updated on industry trends, pastry techniques, and customer preferences to continuously innovate.

Requirements

  • Extensive experience as a pastry chef, with at least 3+ years in a senior or leadership position.
  • Expert knowledge of Italian pastries, desserts, and baking techniques.
  • A strong creative vision, with the ability to design menus that reflect both tradition and innovation.
  • Exceptional leadership skills to inspire and manage a dynamic team.
  • Strong organisational skills and the ability to work under pressure in a fast-paced environment.
  • Knowledge of food safety standards and regulations.
  • A genuine passion for Italian cuisine and a commitment to upholding the highest culinary standards.
