We are seeking a highly skilled and passionate grill cook to join our dinner team, with a primary focus on delivering exceptional à la carte service in our restaurant. The successful candidate will be responsible for running the grill section during dinner service, producing high-quality plated dishes with consistency and flair.

Key Responsibilities:
  • Oversee the preparation and presentation of steaks and pasta dishes, ensuring they meet our high standards of quality and presentation.
  • Demonstrate a strong understanding of steak cuts, doneness levels, and cooking techniques, including grilling and pan-frying.
  • Maintain accurate records of inventory, supplies, and kitchen operations, ensuring efficient use of resources and minimizing waste.
  • Assist in banquets and breakfast operations as needed, helping across buffet, prep, and live stations.
  • Maintain high standards of food safety, hygiene, and HACCP compliance, adhering to all relevant regulations and guidelines.
  • Collaborate with the CDP and Sous Chef to ensure timely service, quality control, and team efficiency, contributing to a positive and productive work environment.
Requirements:
  • Certificate III in Commercial Cookery (or equivalent)
  • Minimum 2–3 years' experience in a hotel or high-end à la carte restaurant
  • Proven skills on the grill, with excellent knowledge of steak preparation and presentation
  • Ability to work effectively in fast-paced, high-volume service environments
  • Versatility, proactivity, and willingness to support across multiple kitchen outlets (banquets, breakfast)
  • Positive team player with a growth mindset
  • Must have full working rights in Australia
