Job Description:

The Trade Instructor Caterer is responsible for overseeing the daily operations of a high-volume kitchen within a correctional facility. This role requires strong leadership and management skills to supervise prisoners on a daily basis, ensuring their behavior and activities align with the facility's routine.

The successful candidate will have experience in food preparation and presentation, as well as budgetary considerations and dietary guidelines. They will be expected to participate in procurement processes and stock control procedures, providing relevant training and education to prisoners on safe kitchen practices and Food Safety Program protocols.

This role also involves liaising with management regarding prisoner employment in the kitchen area, developing food handling protocols that meet health and safety guidelines, and monitoring kitchen equipment to ensure it is maintained properly. Additionally, the candidate will be responsible for providing reports on equipment damage or defects and maintaining accurate administration records.
