About the Role

We are seeking an exceptional Executive Chef to lead our culinary team at one of Newcastle's most exciting luxury hotels. As a senior kitchen leader, you will be responsible for driving innovation and excellence in food quality, safety, and presentation. Key Responsibilities
  • Lead and mentor a high-performance culinary team, fostering a collaborative culture that promotes creativity and teamwork.
  • Develop and implement innovative, seasonal menus that reflect the hotel's culinary identity and exceed guest expectations.
  • Maintain strict compliance with food safety regulations and highest standards of cleanliness, ensuring a safe and healthy environment for guests and staff.
  • Monitor food costs, inventory, and waste to achieve budget targets while supporting sustainability goals, championing environmentally conscious kitchen practices.
  • Support staffing, training, and performance management to build and retain a talented team, upholding our commitment to elevating experiences and collaboration.
Requirements
  • Proven experience in a senior kitchen leadership role, preferably within a luxury hotel or fine dining setting.
  • Strong leadership, communication, and organisational skills, with expertise in modern Australian cuisine and contemporary culinary techniques.
  • Formal culinary training and certifications in food safety and sustainability practices.
