Head Chef Across Two Kitchens – Based at Alfie's Italian, New Lambton

We're seeking a hands-on, experienced, and creative Head Chef to lead both Alfie's Italian (New Lambton) and Frenchie Restaurant (Carrington). You'll be the Head Chef for both venues, with your home base at Alfie's, while also providing menu oversight and operational guidance for Frenchie.

Both kitchens are already staffed with skilled, passionate teams who are ready for you to lead, inspire, and maintain the exceptional standards our guests know and love. This is one role, overseeing two distinctive dining experiences.

What You'll Be Doing

Lead from the front – Work hands-on across both venues as required, however the role will predominantly be situated as on-the-ground Head Chef at Alfie's while guiding Frenchie's kitchen and menus.

Champion two concepts – Keep the heart of our neighbourhood Italian beating strong, while ensuring Frenchie's playful French-inspired dishes shine.

Manage operations – Food costing, rostering, inventory, and workflows across both kitchens.

Drive creativity – Collaborate with Executive Chef Rafael Tonon on menu development for both venues.

Mentor and support – Work with established teams to maintain consistency, skills, and creativity and foster growth.

What We're Looking For

Proven experience as a Head Chef or Senior Sous Chef in high-quality, busy kitchens

Strong leadership and people management skills

Expertise in food costing, inventory, and rostering

Creative flair and experience in menu development

Excellent communication and composure under pressure

Current food safety qualifications and knowledge of food safety standards
