Job Summary:

  • Assist the Head Chef in planning, organizing, and managing kitchen operations to ensure seamless delivery of exceptional dining experiences.
  • Supervise and train kitchen staff to maintain high standards of quality and presentation, consistently delivering outstanding results during peak times.
  • Contribute to menu development, focusing on fresh, seasonal, and local ingredients to enhance the culinary experience.
  • Develop and refine recipes to ensure flavour balance, consistency, and creativity, reflecting the hotel's commitment to excellence.
  • Ensure strict adherence to food safety and hygiene regulations, maintaining a safe and healthy work environment.
  • Manage inventory, ordering, and budget control to optimize kitchen efficiency, minimizing waste and maximizing profitability.
  • Oversee the daily preparation and presentation of meals, ensuring consistent quality and meeting the expectations of discerning guests.
  • Collaborate with front-of-house staff to provide exceptional dining experiences, fostering strong relationships between the kitchen and service teams.
  • Monitor kitchen workflow, ensuring the team adheres to high standards during peak times and resolving any kitchen-related issues promptly.

Requirements:

  • A minimum of 3 years of full-time work experience as a Sous Chef or in a similar role, preferably within a high-volume, premium setting.
  • Certificate IV in Commercial Cookery and Diploma of Hospitality Management, demonstrating a solid foundation in culinary arts and hospitality management.
  • Excellent leadership, communication, and time-management skills, enabling effective collaboration with the kitchen and service teams.
  • A passion for seasonal, locally sourced ingredients and innovative cooking, driving creativity and excellence in menu development.
  • Ability to work effectively under pressure in a fast-paced environment, prioritizing tasks and managing multiple responsibilities.
