The Mandoon Estate, a highly awarded boutique winery in the Swan Valley, is seeking a skilled Pastry Chef to fill a dynamic position within its fast-paced kitchen environment.

As a key member of the team, the successful candidate will be responsible for creating high-quality pastries and desserts. This role requires excellent communication and leadership skills, with the ability to train and develop junior staff.

We are looking for an individual who possesses a passion for producing consistent, quality food, has a strong work ethic, and is flexible with working hours.

The ideal candidate will have formal qualifications in Commercial Cookery, extensive experience in pastry at a high level, and previous experience in a commercial kitchen within a five-star hotel environment.

Key Responsibilities:
  • Working Under Pressure: The ability to remain calm and focused in a fast-paced, professional kitchen environment.
  • Hygiene Standards: Maintaining impeccable hygiene standards at all times.
  • Stock Control: Proper stock control, ordering, and rotation to ensure efficient kitchen operations.
  • Staff Development: Training and developing junior staff members to enhance their skills and knowledge.
  • Occupational Health and Safety: Ensuring compliance with relevant Occupational Health and Safety procedures, including knowledge of HACCP.

This full-time position requires weekend and evening shifts, offering a unique opportunity to work in a dynamic and award-winning establishment.
