The Role:

  • We are seeking an Executive Chef - Japanese Cuisine Specialist to oversee the daily operations of our kitchen, ensuring smooth workflow and timely delivery of dishes.
  • You will collaborate with our team to create menus that incorporate seasonal ingredients and balance budget constraints.
  • Your primary responsibilities will include supervising the preparation and cooking process, ensuring consistency and quality in every dish served.
  • Liaise with management, dietitians, and staff to address food preparation and dietary considerations.
  • Implement and maintain rigorous hygiene standards, ensuring compliance with food safety regulations.
  • Order and manage kitchen inventory, coordinating with suppliers to maintain optimal stock levels.
  • Train and mentor kitchen staff, fostering a collaborative and skilled team environment.
  • Monitor storage conditions, including temperature control, and manage the preservation of ingredients.
  • Contribute to cost management by estimating food and labor expenses and optimizing kitchen operations.
  • Ensure customer satisfaction by adapting to special requests and dietary requirements.
  • Participate in the design and development of menus, using seasonal produce and staying current with culinary trends.
  • Support in staff selection, training, and ongoing professional development within the kitchen team.

About You

  • You must hold a Certificate IV or higher qualification in Cookery, with formal training in the Australian culinary industry.
  • You should have a solid understanding of Japanese food, with experience in preparing and serving Omakase.
  • Prior experience in a restaurant environment is essential; experience in a Japanese food setting is preferred.
  • You are committed to delivering high-quality dishes with consistency and attention to detail.
  • Creative and passionate about culinary arts, you desire continuous learning and skill development.
  • You are reliable, hardworking, and take pride in food preparation and presentation.
  • You are willing to share skills and knowledge with team members, contributing to a positive work environment.
  • Fluent in English, you possess strong communication skills for effective teamwork.
  • Proficiency in additional languages is highly desirable, enhancing customer interaction.
  • You must hold a valid full-time working visa.

Salary Range:$60,000 - $80,000 per annum + superannuation + benefits
