Culinary Team Leader

We are seeking a highly skilled and experienced Culinary Team Leader to lead our kitchen team. This is a full-time position based in Mascot NSW, with a salary range of $77,000 to $85,000 plus superannuation.
To be successful in this role, you will require a Diploma plus Certificate IV in Cookery, or at least 3 years of proven industry experience. A minimum of 1 year of experience will be highly regarded.
You should demonstrate sound culinary knowledge, leadership skills and problem-solving skills in a fast-paced kitchen environment.
Duties and Responsibilities:- Food Preparation: Prepare signature dishes as per patron's preferences and dietary requirements.
- Kitchen Management: Oversee the kitchen team providing directions on food preparation and presentation, and quality of the dishes.
- Menu Development: Trials new formations and combinations to inspire and attract patrons to Mexican cuisine.
- Inventory Management: Select choice ingredients to optimise flavours, aroma and nutritive value, regulate food quantity orders, oversee stock levels and minimise wastage.
- Team Performance: Provide delightful dishes that ensure the best dining experience for patrons, receive feedback and suggestions, and resolve complaints if any, direct and oversee best practices and hygiene compliance in the kitchen.
- Mentorship: Educate and mentor junior cooking staff and kitchen staff, personnel management, rosters and leave planning and staff performance reviews.
