About the Role

We are seeking a highly skilled and experienced Executive Steward to join our team at Accor Hotels. As a key member of our Food and Beverage department, you will be responsible for maintaining the smooth operation of the Stewarding Department, ensuring labor efficiency, budgeted labor costs, and safe working conditions.

Key Responsibilities
  • Supervise and manage the daily kitchen utility operations and staff, including dish room operations, night cleaning, trash room, back dock cleaning and maintenance, employee cafeteria, main kitchen, and restaurant outlets.
  • Monitor the inflow of ordered materials and the maintenance of current materials, ensuring compliance with all Food & Beverage policies, standards, and procedures.
  • Coordinate banquet plating and food running with the Banquet Chef, ensuring seamless execution of events.
  • Enforce proper breakdown procedures for banquets, restaurants, room service, and employee cafeteria, maintaining the highest standards of sanitation.
  • Manage payroll administration, ensuring accurate and timely payment of staff.
  • Participate in the management of department's controllable expenses to achieve or exceed budgeted goals.
  • Inspect supplies, equipment, and work areas to ensure efficient service and conformance to standards.
  • Schedule events, programs, and activities, as well as the work of others, ensuring a safe and productive operation.
  • Conduct monthly and quarterly inventories of supplies, maintaining accurate records.
  • Interact with vendors and Health Department representatives as required, ensuring compliance with regulations.
  • Ensure employees maintain required food handling and sanitation certifications, promoting a culture of safety and excellence.
  • Recruit, interview, select, hire, and promote employees in the organization, adhering to Accor's diversity and inclusion policies.
Requirements
  • Constant standing throughout shift.
  • Occasional lifting and carrying up to 40 lbs.
  • Occasional kneeling, pushing, pulling, lifting.
  • Occasional ascending or descending ladders, stairs, and ramps.
