Meat Craft Specialist

A high-caliber Meat Craft Specialist is required to lead the preparation, processing, and presentation of premium meats. This hands-on role demands a strong understanding of whole carcass butchery, smallgoods production, and a commitment to sustainable, ethically sourced meat.

  • Key Responsibilities:
  • Break down whole carcasses into retail-ready cuts with minimal waste.
  • Prepare specialty cuts using traditional techniques and premium ingredients.
  • Craft smallgoods such as sausages, cured meats, and smoked products using artisanal methods.
  • Operate and maintain butchery equipment for efficiency and safety.
  • Manage smoking chambers, curing vats, and cooking kettles for precision.
  • Provide expert advice on meat selection, cooking techniques, and optimal cuts for different culinary uses.

Requirements:

  • Minimum 1+ years of experience in butchery, preferably in a premium or artisanal environment.
  • Relevant Certificate III Qualification related to the field.
  • Proficiency in whole carcass butchery, smallgoods production, and specialty cuts.
  • Strong knowledge of meat safety, hygiene standards, and HACCP compliance.
  • Excellent customer service skills with a passion for educating clients.
