Job Summary

We are seeking a highly skilled and experienced Pastry Department Head to join our team at Sofitel Sydney Darling Harbour. As a key member of our culinary team, you will be responsible for supervising and supporting bread operation production and delivery for all related outlets.

Key Responsibilities

  • Work closely with the Executive Pastry Chef to oversee the production and delivery of bread and pastries.
  • Assist the Pastry Chef with menu preparations, ensuring adequate supplies are available for service.
  • Lead by example, demonstrating a passion for excellence and a commitment to delivering exceptional service to our guests.
  • Ensure all ambassadors are following procedures according to departmental and hotel policies.
  • Liaise with ambassadors regarding menu availability, additions, and changes.
  • Train junior ambassadors on bread making knowledge and skills, delegating duties and responsibilities as needed.
  • Maintain strict hygiene and safety procedures, ensuring a clean and safe working environment.
  • Embody the art of French hospitality, providing personalized service and achieving the "Essence of Pleasure" for our guests.
  • Perform tasks in a timely manner, assisting with the implementation and maintenance of Sofitel Brand Standards.
  • Contribute to culinary revenue through effective food cost control.
  • Lead ambassadors by setting a positive example, assisting senior chefs with menu preparation, and monitoring productivity.

Requirements

  • Qualification in Commercial Cookery.
  • Highly motivated with excellent attention to detail.
  • 2-3 years' experience in a similar role.
  • Strong communication skills.
  • Professional appearance, representing the Sofitel brand.
  • Ability to work a rotating roster, including weekends and public holidays.
  • Genuine passion for gastronomy.
  • Working understanding of food safety standards and HACCP.
  • Ability to work under pressure and meet tight deadlines.
