We are looking for an experienced and passionate Full Time Head Chef to join the PLG team at the Sugar Gum Hotel in Hillside. You’ll lead a talented team and set the kitchen standard for our venue. If you thrive in a fast‑paced environment we want to hear from you

A local landmark located in Hillside, The Sugar Gum Hotel is a favourite with the locals. The venue boasts a spacious family bistro, large kids areas to keep them entertained for hours, and a casual area referred to as “the social” – the go‑to spot for a pre‑dinner cocktail or a casual catch‑up with friends.

What will my duties include?

- Prepare, cook and serve food ensuring a high level of quality and presentation at all times.

- Develop menus, specials and functions.

- Manage food purchases, menu costings and monthly stocktakes.

- Oversee the appropriate receiving, storage and rotation of food.

- Ensure food safety audit compliance, including food safety logbook, temperature checks and all other regulatory requirements.

The role may be quite fast‑paced and require tasks such as lifting boxes, kegs or stock, standing for long periods and utilising stairs.

What we are looking for:

- Hold a Certificate 3 or 4 in Commercial Cookery (or equivalent).

- Previous experience in a similar role.

- Ability to lead, motivate and manage kitchen staff effectively.

- Demonstrated high‑level customer service skills in a variety of hospitality offerings.

- Proficiency in budgeting and controlling food costs.

- Understanding of current Food Safety legislation.

- Willingness to work various shifts, including evenings, weekends and holidays as needed.

- Full working rights in Australia.
