Job Title: Itamae Sushi and Sous Chef

Salary: $78,000 per annum plus Superannuation

We are looking for a creative and proficient "Itamae" Sushi and Sous Chef in all aspects of authentic Japanese food preparation. Under the direction of the Head Chef, you will maintain complete control of the Sushi Table and have supervision over the main kitchen.

Responsibilities
  • Itamae (head sushi chef) responsible for the overall preparation, production and presentation of all the sushi.
  • Cook guests' orders according to their preferences.
  • Employ food safety best practices and ensure staff compliance.
  • Work with appropriate caution in a kitchen with knives and high-temperature surfaces, including sharp sashimi knives.
  • Select quality ingredients to achieve the best flavour in sushi, sashimi and other dishes.
  • Experiment to develop new sushi and Japanese cuisine specialties to attract diners.
  • Coach other chefs, cooks and kitchen staff to perform at their best.
  • Determine how much food to order and maintain an appropriate supply.
  • Organise budgets and expenses for the kitchen and staff.
  • Keep up with trends in sushi and Japanese restaurant industry to ensure a positive guest experience.
  • Work quickly and accurately during busy periods, such as weekends and evenings.
  • Takes direction and collaborates with the restaurant's administrative team.
Qualifications
  • Relevant Diploma or Higher
  • Substantial experience in a similar role as a Full Time Itamae Sushi and Sous Chef
  • Strong knowledge in authentic Japanese sushi, food, desserts and garnishing
  • Experience in training and supervising kitchen staff
  • Good understanding of budgeting processes and principles
  • Knowledge of purchasing, ordering, receiving, food costing and inventory procedures
