A unique opportunity has arisen at Pennyhill Park. We are actively seeking a Restaurant Manager to lead our Michelin star restaurant, the Latymer.
Latymer is Pennyhill Park's fine dining restaurant, offering bold flavors in dishes using locally sourced ingredients inspired by the seasons. With accolades such as a Michelin star and 5 AA Rosettes, guests can enjoy exquisite tasting menus for dinner.
Head Chef Steve Smith is regarded as one of the most inventive chefs of his generation, renowned for modern British cuisine based on seasonal ingredients. He has held a Michelin star for twenty years, earned five AA Rosettes, a score of 8/10 in the Waitrose Good Food Guide, and received a Catey Award for Chef of the Year.

Main Responsibilities
As the Latymer Restaurant Manager, you will:
- Lead by example to uphold service standards for a Michelin-starred restaurant
- Create a warm and welcoming environment for all guests
- Ensure guest expectations are exceeded across all service areas
- Possess extensive knowledge of food, wines, cooking techniques, and allergies to advise guests appropriately
- Have a strong understanding of restaurant service styles
- Oversee shifts, remaining hands-on and motivating the team
- Maintain high standards of presentation, cleanliness, and hygiene in the restaurant
- Manage stock ordering and control to ensure availability
- Oversee back-of-house areas for cleanliness, hygiene, and wastage control
- Build strong relationships with the kitchen team
- Train and mentor front-of-house staff
- Maximize sales and collaborate with the Head Chef to develop the business
- Carry out Duty Management shifts as required
The Ideal Candidate
Our successful Restaurant Manager will have:
- Previous managerial experience in a fine dining restaurant
- A passion for food and beverage
- A background in luxury or Michelin-starred hotel or restaurant environments
- Strong communication skills (verbal, listening, writing)
- Exceptional organizational skills and attention to detail
- Knowledge of ingredients, cooking methods, and dietary requirements
- Drive to create memorable guest experiences
- Ability to work under pressure in a busy luxury setting
- WSET Level 3 qualification is advantageous
