Job Description
Pullman & Mercure Melbourne Albert Park are seeking a passionate, dedicated and experienced Executive Sous Chef to join our kitchen team
About the Role:
- Assisting the Executive Chef in daily kitchen operations and oversea food preparations in the à la carte and banqueting kitchens.
- Develop and test new recipes and seasonal menus that highlight flavour and creativity.
- Supervise, train and develop kitchen staff, fostering a collaborative, inclusive and high-energy working environment.
- Oversee and uphold food quality and hygiene standards in our kitchen operations, including banquets and à la carte restaurants.
- Manage inventory, order supplies and minimise waste to optimise kitchen efficiency.
- Facilitate and promote a collaborative interdepartmental work environment throughout the hotel.
Qualifications
The ideal candidate will have a background in both à la carte and banqueting operations, a creative approach to menu development and a desire to achieve above the expected.
About You:
- Ability to inspire, nurture and lead a creative diverse culinary workforce.
- Previous experience with working with large fast-paced culinary operation.
- Previous banqueting experience (Preferred).
- Strong understanding of seasonal menu creation and design.
- Strong knowledge of Food Safety (HACCP).
- Strong ability to effectively interact and communicate with staff, management and vendors.
- Proven ability to design and manage efficient staffing schedules, optimising team performance.
- Demonstrated experience in efficiently managing stock levels and overseeing invoicing processes.
