Executive Head Chef

As a passionate and experienced Executive Sous Chef, you will play a crucial part in the success of our kitchen operations at Pullman & Mercure Melbourne Albert Park.
We are seeking a dedicated professional to assist the Executive Chef in overseeing daily kitchen activities, including food preparations in the à la carte and banqueting kitchens. Your creativity and expertise will be invaluable in developing new recipes and seasonal menus that showcase our culinary excellence.
You will supervise, train, and develop our kitchen staff, fostering a collaborative and inclusive work environment that drives high performance. Ensuring the highest standards of food quality and hygiene is essential, as well as managing inventory and minimising waste to optimise kitchen efficiency.
Your Skills and Qualifications- A background in both à la carte and banqueting operations is essential for this role.
- Creative approach to menu development and a desire to achieve above expectations are must-haves.
- Previous experience working with large fast-paced culinary operations is preferred.
- Strong understanding of seasonal menu creation and design is necessary.
- Familiarity with Food Safety (HACCP) regulations is essential.
- Effective communication and interpersonal skills are vital for interacting with staff, management, and vendors.

Your ability to effectively manage stock levels and oversee invoicing processes will also be critical to your success.
