Position Overview
The Sous Chef challenges our expectations and brings new and exciting ideas to create exceptional guest experiences across our spaces.
They will effectively manage and coordinate the production of food to maximise profitability and be responsible for approving all prepared food items that leave the kitchen.
Key Responsibilities
Ensure that the Hotel's kitchens produce a high quality food product at all times.
Check quality and accuracy of all daily deliveries of food and non-food related items.
Possess detailed food and menu knowledge pertaining to your role and manage all kitchen section requirements accordingly.
Supervise, check and correct all food preparation and rotation requirements for service.
Anticipate and attend to the guest's needs and desires immediately.
Monitor rosters to ensure that all sections and areas within the kitchen are properly staffed.
Prepare, cook and serve food on sections as required.
Delegate duties to Chefs of a lower grade.
Liaise with Chefs regarding restaurant and banquet functions.
Liaise with the F&B Manager and outlet Supervisors to ensure a smooth running operation.
Ensure that all standard recipes are followed in all outlets.
Monitor the rotation of stock in all storage facilities.
Closely monitor ordering and par levels to achieve food cost targets.
Maintain a clean and safe working environment.
Hire, train, and supervise cooks and other food preparation workers.
Facilitate the efficient and effective staffing of the kitchen such that financial and service quality targets are achieved.
Kitchen team members are working productively and harmoniously together as a team.
Responsible for all Chefs, kitchen hands and stewards.
Represent and maintain professional working relationships with all departments and managers.
The candidate will have strong all-round experience in: Sashimi, Communication.
It would be advantageous to have Tempura and Robata experience.
Experience and Skills
2 years' experience in a similar style Japanese restaurant.
