Position Overview
The Demi Chef supports the Chef de Partie in the preparation, cooking, and presentation of dishes, ensuring CU29's high culinary standards are met at all times. This role is ideal for a skilled and motivated chef looking to refine their abilities in a premium dining environment while contributing to a high-performing kitchen team.
Key Responsibilities
Food Preparation & Cooking
- Assist in preparing and cooking menu items to CU29's recipes and quality standards.
- Ensure food presentation is consistent, visually appealing, and delivered to specification.
- Assist with mise en place for your section, ensuring readiness for each service.
Section Support
- Work under the guidance of the Chef de Partie to maintain efficiency in your assigned section.
- Step in to run the section when required, ensuring smooth and timely service.
- Coordinate with other kitchen sections to ensure seamless operations.
Stock & Waste Management
- Monitor stock levels for your section and report shortages to the Chef de Partie.
- Store, label, and rotate ingredients to maintain freshness and minimize waste.
- Follow portion control guidelines to assist in food cost management.
Compliance & Hygiene
- Adhere to all food safety, hygiene, and workplace health & safety regulations.
- Maintain cleanliness and organization of your work area during and after service.
- Follow HACCP requirements and complete relevant documentation as needed.
Teamwork & Development
- Collaborate with kitchen team members to ensure efficient workflow.
- Support and guide Commis Chefs and kitchen hands when necessary.
- Actively seek opportunities to develop your skills and culinary knowledge.

- Ability to work well under pressure in a busy kitchen.

Qualifications & Experience
- Certificate III in Commercial Cookery or working towards completion (required).
- Minimum of 2 years' experience in a commercial kitchen, preferably in fine dining or premium restaurants.
- Knowledge of food safety procedures and safe kitchen practices.
- Availability to work evenings, weekends, and public holidays.
