Position Overview

We are looking for a talented and motivated Head Chef to lead our kitchen team and deliver high-quality, consistent meals that our customers love. This is a hands-on role that involves running the pass, managing the kitchen operations, and ensuring food cost and service standards are met.

Key Responsibilities

Kitchen Leadership

  • Oversee day-to-day kitchen operations, including preparation, cooking, and service.
  • Lead, train, and motivate kitchen staff to perform at their best.
  • Create rosters and ensure the kitchen is staffed appropriately for service.

Menu Development

  • Design and update seasonal menus and weekly specials.
  • Ensure portion sizes, presentation, and taste remain consistent.
  • Cater to dietary requirements and develop allergen-friendly options.

Stock & Cost Control

  • Manage food ordering, deliveries, and storage.
  • Track food costs and minimise waste to meet budget targets.
  • Conduct regular stocktakes and maintain supplier relationships.

Compliance & Safety

  • Maintain a clean and safe kitchen environment, complying with food safety regulations.
  • Ensure all staff follow hygiene, cleaning, and temperature control procedures.
  • Report and manage equipment maintenance issues promptly.

Service Quality

  • Run the pass during service and maintain a steady flow of meals.
  • Ensure docket times meet service standards.
  • Work closely with management and front-of-house staff to provide a great customer experience.

Skills & Experience

  • Proven experience as a Head Chef or Senior Sous Chef ready to step up.
  • Strong background in pub or bistro kitchens.
  • Excellent leadership and communication skills.
  • Sound knowledge of food cost management and supplier ordering.
  • Food Safety Supervisor certificate (or willingness to obtain).
  • Ability to work nights, weekends, and public holidays as required.
