Hospitality experience will be highly regarded. However, we will also consider applicants wishing to take the next step in their career.
The successful candidate will be responsible for:
- Organising and controling the operations the restaurant to provide dining and catering services
- Planning menus in consultation with Chefs
- Planning and organising special functions
- Arranging the purchasing and pricing of goods according to budget
- Maintaining records of stock levels and financial transactions
- Ensuring dining facilities comply with health regulations and are clean, functional and of suitable appearance
- Conferring with customers to assess their satisfaction with meals and service
- Selecting, training and supervising waiting and kitchen staff
- Taking reservations, greeting guests and assist in taking orders
- Ensuring the room is set to the specifications as outlined by the reservations program
- Ensuring mis en place is prepared for the following shift
- Ensuring all beverages are stocked in the appropriate locations
- Briefing the team for a successful set up and service of each service
- Directing all team members for each service to ensure the flawless execution of the lunch or dinner service
- Ensuring the productivity and performance of all team members, providing feedback in a constructive manner
- Counselling the team with performance or attitude problems
- The control of theft, wastage and damage
- End of shift cash up
- Ensuring presentation of food is compliant with restaurant standards
- Supporting the management team to ensure targets are met with labour and food costs
- Adhering to and supervision of the cleaning schedule
- Maintaining the functional administration of the restaurant, i.e., docket procedures, stations, table numbers etc
- In depth Knowledge of the full menu, and be able to give a detailed description of dish composition
- To work as part of the wider restaurant team, assisting in other departments on an as needed basis
- Reporting of each service to the Operations Manager at the conclusion of each service
- Adherence to liquor licensing and other laws
- Escalating maintenance issues to the relevant parties
- Monitoring restaurant standards within specifications
- Ensuring compliance with all health and safety requirements
- Supervision of the adherence to the cleaning schedule and take action appropriately
- Ensuring the Brasserie works efficiently
- Carrying out all tasks in a reasonable time frame to ensure the smooth running of the area
- Development of skills within the team
