The Malaya is a Sydney dining institution that has been serving its unique style of Southeast Asian cuisine since 1963. We've recently moved to a brand-new location at Grosvenor Place in the CBD, so it's an exciting time to join our team as we begin this new chapter in a modern and refreshed space.

We have recently expanded our wine offering with a focus on premium Australian wines (with a fantastic cellar of back vintages) and German riesling and are looking for a full-time sommelier to join our team to take the lead in growing and developing our wine program further.

Along with qualified sommeliers we will also consider a junior sommelier or other candidates who are looking to transition into a sommelier role if they can demonstrate passion and a desire to learn quickly with guidance and mentorship.

In this role you will be required to:

  • Deliver exceptional beverage service to our guests
  • Conduct weekly wine training for the wider floor team to increase knowledge of our wine list, promote sales growth, and maintain flawless wine service skills
  • Collaborate on designing the wine list and selecting wines

  • Be the main point of contact for suppliers, including:

  • Meeting for tastings and sales appointments

  • Negotiating prices
  • Conduct weekly orders
  • Overseeing stock storage, organisation, and stock takes

We are looking for someone with:

  • Passion for wine and the wine industry
  • Strong knowledge of Australian wines, and at least basic international knowledge
  • Previous restaurant experience in a fast-paced environment
  • WSET level 2 or CMS qualifications (would be beneficial but not mandatory)
  • Confidence carrying 3 plates
  • A current NSW RSA certificate
