The Role

As Restaurant Manager, you'll be the on-floor standard-bearer for Beverly's service and beverage program. You'll lead our FOH team, lift the guest experience, and partner closely with the General Manager and Bar Manager (day-to-day) as well as the Executive Chef, to keep service humming from daylight to sunset.

Major Goal: Lead, monitor, and mentor all FOH staff to meet and exceed guest expectations through warm, genuine, informed service and an elevated product knowledge.

What You'll Do

Service & Standards

  • Run the floor with presence: briefings, section allocations, pace of service, table touches, recovery.
  • Ensure the room always looks and feels "Beverly."
  • Maintain and develop Sequence of Service and clear SOPs.
  • Professionally manage feedback and complaints to swift resolution.

People & Training

  • Assist with recruitment, induction, and on-shift coaching for FOH team, complete performance appraisals.
  • Lead tastings and service drills; lift confidence in storytelling, pairing, and upselling with integrity.
  • Uphold grooming and presentation standards; model genuine, relaxed yet refined hospitality.

Beverage & Wine Leadership

  • Own weekly wine ordering & receiving, organise cellar/wine storage, update lists, and lead food pairings/tastings.
  • Conduct monthly stocktakes; partner with the General manager on BTG rotations and training content.
  • Monitor beverage service quality and consistency across the venue.

Operations & Compliance

  • Manage FOH setup and close; be able to cash up & close independently.
  • Co-manage rosters with the FOH Management; ensure accurate sign-on/off and smart deployment.
  • Maintain RSA leadership, update the RSA compliance folder, and uphold safety procedures.

Commercial Focus

  • Support wage % control, cost monitoring, cash-handling compliance, and reduction of wastage.
  • Track average spend and coach the team on guest-first ways to lift revenue (pairings, add-ons, pacing).
  • Attend weekly ops meetings; contribute ideas for events and brand moments.

About You

  • 3+ years in a management role within premium/luxury restaurants or refined high-volume venues.
  • Serious wine knowledge: comfortable with varieties, regions, cellar organisation, and food pairings; confident training others.
  • A natural leader and communicator calm under pressure, solutions-focused, hands-on, and guest-obsessed.
  • Event-curious with creative flair; strong relationship builder across guests, VIPs, partners, and the team.
  • Tech-savvy with POS, table management, and modern ordering systems.
  • Current Victorian RSA.
  • Flexibility to work key services over 7 days, with additional shifts as needed.
