About the role

As Chef de Partie at Ishizuka, you will play a crucial role in the kitchen of this acclaimed Japanese fine dining restaurant in the heart of Melbourne. Reporting to the Head Chef, you will be responsible for overseeing a section of the kitchen and delivering exceptional dishes to our discerning clientele. This is a full-time position based in our Melbourne CBD restaurant.

What you'll be doing

  • Preparing and cooking high-quality Japanese cuisine to Ishizuka's exacting standards
  • Supervising junior chefs in your section and ensuring consistent, efficient and safe food preparation
  • Maintaining impeccable hygiene and sanitation practices in the kitchen
  • Collaborating with the Head Chef to develop and refine recipes and menus
  • Assisting with inventory management and ordering of ingredients
  • Adhering to all health and safety regulations

What we're looking for

  • Minimum 5 years' experience as a Chef de Partie or equivalent role in a high-quality restaurant
  • Proven expertise in preparing and cooking Japanese cuisine to an exceptional standard
  • Specialisation in traditional Japanese cuisine and Kaiseki dining experience required
  • Strong communication and leadership abilities to guide and develop your team
  • Passion for using premium, seasonal ingredients and creating visually stunning dishes
  • Flexible and adaptable to a fast-paced, high-pressure environment
  • Food safety and hygiene certification
  • Australian work rights will be assessed on a case-by-case basis
