The ideal candidate is required to handle a lot of tasks associated with dessert making (hot, refrigerated pastry and frozen ice cream desserts), including starting up machinery, choosing ingredients and ensuring that the production processes go smoothly. You will have to have knowledge and experience in working with dessert ingredients and the right temperatures in which to handle the production process. The right candidate needs experience in the food manufacturing industry.

Some important duties that you will be performing in this role include:

  • Study work orders to understand the quantity and type of pastry and other desserts to be manufactured each day.
  • Liaise with procurement managers to acquire sufficient dessert mixes and other ingredients
  • Start-up kitchen equipment and check it for optimal functioning
  • Mix ingredients such as whipped cream, mousse and custards in correct quantities to ensure that they conform to set recipes
  • Ascertain that the taste and texture of each batch is in accordance to the standards set
  • Store all desserts in appropriate containers, in designated refrigeration areas
  • Mold ice cream desserts into different shapes and decorations using silicone mould forms.
  • Tint and decorate moulded frozen mousse cakes with icing and toppings
  • Mix and cook toppings such as sauces and syrups.
  • Handle inventory of supplies and ensure that appropriate maintenance is performed on utensils and ice cream making machinery.

  • Create and prepare desserts in accordance with the existent menu
  • Create and bake desserts to accompany different meals in restaurants
  • Decorate cakes and bake goods according to requirements
  • Plate desserts for serving
  • Inspect the quality of the ingredients and measure them for specific recipes
  • Talk to suppliers and choose the ingredients needed for desserts and other baked goods
  • Liaise with suppliers for ingredient purchase and ordering
  • Ensure that the kitchen equipment is in good conditions and meets all requirements
  • Organise the kitchen staff and supervise while working
  • Train the kitchen staff to meet imposed standards
  • Clean equipment and utensils and maintain the kitchen clean and in good order for proper functioning
