Tropicana Caffe', a renowned Italian restaurant in the heart of Darlinghurst, Sydney, NSW, is seeking an experienced Head Chef (Italian Cuisine) to join our talented culinary team. This is a full-time role where you will be responsible for leading the kitchen and delivering exceptional Italian Cuisine to our discerning customers.

What you'll be doing

  • Oversee the day-to-day operations of the kitchen, ensuring the efficient and smooth running of all culinary activities
  • Lead and inspire the kitchen team, providing guidance, training and mentorship to maintain high standards of food preparation and presentation
  • Develop and refine the restaurant's new classic Italian menu, incorporating seasonal and locally sourced ingredients
  • Ensure strict adherence to food safety and hygiene regulations
  • Monitor inventory, order supplies, and manage food costs to maintain profitability
  • Foster a positive and collaborative work environment in the kitchen

What we're looking for

  • Minimum 5 years' experience as a Head Chef or in a senior culinary role, with a strong background in Italian Cuisine
  • Exceptional leadership and team management skills, with the ability to inspire and develop a talented kitchen brigade
  • Exceptional attention to detail and a commitment to maintaining the highest standards of food quality and presentation
  • Strong problem-solving and decision-making abilities to handle the fast-paced nature of a busy kitchen
  • Excellent time management and organisational skills to ensure efficient kitchen operations
  • Passion for using fresh, seasonal ingredients and creating innovative contemporary classic Italian dishes

What we offer

Sponsorship considerations will be given to this position for eligible applicants.

Small team with less than 15 chefs. Full time position: 5 days, 2 days off - package starting salary $85,000 - $105,000 + super. Life / Work balance
