As Restaurant Manager, you will be the driving force behind the seamless operation of our food & beverage outlet, with a strong focus on guest experience and service delivery. You'll lead a dynamic team, ensuring every detail – from service to presentation – reflects our commitment to excellence.
You'll play a key role in inspiring and developing the team to consistently deliver exceptional dishes with flair and efficiency. An experienced culinary star, you'll champion service and consistency, you'll lead by example in leading your team confidently setting the tone for outstanding food, experience and team culture.
The Mulberry Group will operate five distinct venues under one roof, each designed to reflect Melbourne's layered food culture while adding something new to the mix. From morning coffee runs to late-night soundtracks, these venues will be seamlessly woven into the rhythm of the hotel and the city beyond.
Coupette Corner Bistro & Bar will offer early morning breakfast to long lunches, after-work drinks, and late suppers, Coupette will offer a produce-driven, European-inspired neighbourhood bistro menu with a distinct Melbourne sensibility.
Service Excellence
- Oversee daily outlet operations, ensuring smooth service and guest satisfaction.
- Lead from the front – hands-on in service, coffee-making, guest interaction, and team support.
- Maintain impeccable presentation standards across all outlets.
- Ensure consistency in food and beverage quality, style, and timing.
- Collaborate with Sales & Marketing to drive business, execute promotions and events.
- Monitor market trends to drive innovation and growth.
People Leadership
- Model exemplary leadership practices (Kouzes & Posner).
- Coach, train, and develop team members to deliver exceptional service.
- Foster a culture of open communication, feedback, and collaboration.
- Lead crisis management and critical incident response.
- Partner with General Manager and People & Capability on recruitment and performance.
Financial & Operational Management
- Conduct monthly stocktakes and wastage reporting.
- Manage food costs in collaboration with Executive Chef and General Manager.
- Prepare rosters that balance coverage and cost-efficiency.
- Set and review financial forecasts, budgets, and performance metrics.
What You Bring:
- Formal qualifications in Hospitality Management or related field.
- Extensive experience managing hospitality outlets, ideally within hotels or premium event spaces.
- Immaculate grooming and professional presentation.
- Strong understanding of WHS, privacy, and security protocols.
- A guest-first mindset with a flair for creating memorable experiences.
