The Role

Marnong Estate are seeking an experienced and motivated Restaurant Manager to oversee the day-to-day operations of our signature Restaurant – La Vetta. This role is responsible for ensuring the highest standards of guest satisfaction, smooth running of facilities, and effective management and training of staff.

The ideal candidate will be hands-on, highly organised, and committed to delivering outstanding hospitality experiences and have a strong ability to upsell.

Key Responsibilities

• Oversee daily operations of an elevated dining experience restaurant.
• Manage hospitality services including food & beverage and guest experiences.
• Lead, train, and motivate staff to deliver excellent service standards.
• Regular team training to elevate service standards.
• Monitor budgets, costs, and inventory, ensuring financial targets are met.
• Implement and maintain health, safety, and compliance standards across all departments.
• Develop and improve policies, procedures, and guest service strategies.
• Handle guest feedback, complaints, and escalations professionally.
• Collaborate with senior management to report on performance, staffing, and business opportunities.

Skills & Attributes Required

• Strong leadership skills with proven ability to motivate and manage diverse teams
• Strong Wine knowledge – WSET 3 or above highly regarded
• Proficiency is suggestive selling
• Exceptional communication and interpersonal abilities with a guest-centric mindset
• Financial management, including budgeting, forecasting, and reporting experience
• Highly organised with strong problem-solving skills and attention to detail
• Calm under pressure with the ability to manage multiple priorities simultaneously
• Thrives in a dynamic, fast-paced environment
• Experience with POS systems, booking platforms and hospitality software

Qualifications & Experience

• WSET 3 or above highly regarded
• Degree or diploma in Hospitality Management, Business, or a related discipline (highly regarded)
• RSA certification (required)
• Minimum 3 years' management experience within the hospitality sector
• Proven track record of staff training
• Proven track record of delivering exceptional guest experiences and strong operational results
• Proficiency with property management systems (PMS), booking platforms, and hospitality technology
