The Boab Tavern and Function Centre, a family owned and operated local Tavern, located in the Eastern suburb of High Wycombe, WA, is seeking a full-time energetic and enthusiastic Sous Chef to join our dynamic kitchen team and assist our Head Chef in taking our menu to the next level.
This role will be responsible for:
· Leading by example and developing the team
· Organising, mentoring, developing and nurturing junior staff
· Competently running busy service times, especially in the absence of the Head Chef
· Culinary creativity, menu planning and supporting the Head Chef and our Managers, who thrive on fresh ideas and input
· Food safety and quality compliance
· Brand management
· Reporting to the Head Chef on status of equipment, work areas and general supplies to assist with established health and safety standards and regulations
· Assisting with food preparation, storage, wastage and kitchen wage costs
The successful candidate will have the following:
· Relevant trade qualifications, including a minimum of 3 years' experience in commercial kitchens.
· Proven experience as a Sous Chef in a fast paced, dynamic environment.
· Ability to work autonomously, organise and manage a busy kitchen and workstations.
· Ability to control stock and ordering, in conjunction with the Head Chef.
· Knowledge and understanding of current trends.
· Passion and pride for quality food, taste and presentation.
· Knowledge and experience in menu design, costing and implementation.
· Experience in managing cost of goods.
· Skills to maintain high standards of hygiene, quality and understanding of food safety practices and plans.
· Professional work ethic, good communication skills and reliability.
· A good sense of humour.
· Experience in developing and maintaining professional relationships, with internal and external stakeholders.
· Availability to work across the week, including evenings and weekends.
