EXCITING OPPORTUNITY FOR INDIAN CHEF (2 positions) required for a Indian Restaurant in WOOLGOOLGA NSW.

Opportunity to be running your own kitchen. The role requires a full time CHEF in our commercial kitchen to perform the following duties:

  • Menu updates, adding new items, finalising cost and portion size of the serves. Menu planning for outdoor caterings and parties/functions, looking after the catering menu planning as per customer requirement and cost to the customers as well.
  • Develop and standardize the recipes, food cooking and serving techniques to maintain the quality and standard of the restaurant
  • Maintains the kitchen stock to the required capacity, constantly reviews the buying policy of the restaurant and in particular ensure that food stuffs are sufficient for a at least next seven days operation. For bulk food items like Flour, Rice, Spices - ensure there is plenty of stock available. For fresh items (Vegetables, Meat, Poultry, Dairy etc) - order, receives the food items and check the quantity and quality of the items received and then sign the invoice.
  • Schedule and coordinates the work with Cook and kitchen hands to ensure no food wastage is done in the kitchen and no compromise is taken with the food quality as well.
  • Advices and recommend any purchase of cooking equipment including cutlery, crockery, glassware, refrigeration, stoves, storage and appropriate racking
  • Actively instigate and put into effect training programs for Australian citizens, both employed as wait staff and in the kitchen in the proper running of an Indian restaurant.
  • Advise the Manager of any upcoming events which by themselves will increase exposure and patronage of the restaurant.
  • Regularly advise management and otherwise keep informed in relation to world cooking trends, particularly those emanating from India and surrounding regions. Actively participate in local community food and wine shows.
  • Liaise with the other restaurants within the area and surrounds to explore the possibility of cost referrals and buying programs.
  • Visit markets and other outlets for foodstuffs on a regular basis to inspect the quality of in-coming provisions as well as dictating requirements for the Indian restaurant.
  • Manage relationships with distributors and resolve any issues arises.
  • Manage kitchen staff and assign tasks related to food preparation, cooking, serving and storage of the food.
  • Ensure safety and sanitation in the kitchen
  • Prepare, Cook and store the food as per order and requirement
  • Train new staff
  • Liase with Restaurant Manager and senior management.

In addition to the above duties and responsibilities it is the Chefs fundamental responsibility to ensure the continued viability and ongoing profitability of the restaurant. It is also paramount to establish and maintain and highest standards of cuisine and ambience within the Restaurant
