Position Overview
The Junior Chef de Partie supports the Chef de Partie in managing an assigned kitchen section, ensuring the preparation and presentation of dishes align with CU29's high culinary standards. This role is designed for chefs developing their technical skills and consistency while learning to work effectively under pressure. The Junior Chef de Partie plays a vital role in maintaining kitchen efficiency, supporting senior chefs, and contributing to the success of the team.
Key Responsibilities
Section Support & Operations
- Assist the Chef de Partie with all aspects of the designated kitchen section, including mise en place, cooking, and plating.
- Ensure dishes are prepared consistently and presented to CU29's standards.
- Support smooth service by coordinating with other sections and assisting during peak periods.
Food Preparation & Service
- Prepare ingredients and dishes according to CU29's recipes, specifications, and quality standards.
- Monitor cooking times and temperatures under the guidance of the Chef de Partie.
- Assist in adapting recipes or methods for dietary requirements or special requests when approved by senior chefs.
Team Collaboration & Learning
- Work closely with fellow chefs to maintain an efficient and harmonious kitchen operation.
- Actively learn from and support the Chef de Partie, Sous Chef, and Head Chef.
- Assist in guiding Commis Chefs and apprentices with basic tasks and kitchen practices.
Stock Control & Waste Management
- Assist in monitoring stock levels for the assigned section and report shortages to the Chef de Partie.
- Ensure ingredients are stored, labelled, and rotated properly to minimize waste.
- Contribute to accurate stock takes and inventory checks as required.
Compliance & Hygiene
- Follow all food safety, hygiene, and workplace health & safety standards.
- Maintain cleanliness and organization of your section at all times.
- Comply with HACCP standards and ensure accurate record-keeping as directed.

Qualifications & Experience
- Certificate III in Commercial Cookery or currently working towards completion (required).
- Minimum 2 years kitchen experience, preferably in fine dining or premium restaurants.
- Basic knowledge of food safety and kitchen operations.
- Availability to work evenings, weekends, and public holidays.
