About The Fullerton Hotels and Resorts

The Fullerton Hotel Sydney is an award-winning deluxe hotel set in the heart of Sydney's fashion and finance district. Part of the redevelopment of Sydney's historic General Post Office on Martin Place, this luxurious hotel is surrounded by Sydney's most exclusive designer shopping, best restaurants, theatres and nightlife. Uniquely combining Sydney's original General Post Office building with a modern 31-storey tower, the hotel has 416 rooms and suites.

The hotel offers impressive event and banquet facilities, including a highly flexible and sophisticated pillar-free hotel ballroom that can accommodate up to 1,000 guests for a seated event, a Victorian-style ballroom, and eight smaller function spaces.

About Our Kitchen Department:

The Place Kitchen supports the Hotel's signature all-day dining outlet which serves three main meal periods as well as 24/7 cuisine through in-room dining.

Our Main Kitchen services our event spaces and 2 ballrooms and our creative team in Pastry.

We Are Hiring:

We are currently recruiting for the following roles:

  • Chef de Partie
  • Demi Chef
  • Commis Chef

In these roles, you will bring your culinary expertise and creativity to the table, preparing high-quality dishes that exceed guest expectations. You'll have experience in your area of specialisation and the confidence to contribute to a collaborative kitchen team.

Key Responsibilities:

  • Assist in the preparation, cooking, and presentation of dishes for both all-day dining and à la carte services.
  • Ensure food quality, consistency, and presentation meet the highest standards set by the restaurant.
  • Maintain a clean, organized workstation, following all health, hygiene, and safety regulations.
  • Collaborate with senior chefs and the kitchen team to ensure efficient kitchen operations, especially during peak service times.
  • Contribute to menu planning, daily specials, and new recipe development under the guidance of the senior chefs.
  • Execute additional requests or tasks assigned by the Executive Chef and Director of Culinary as needed.

Requirements

  • Full working rights in Australia
  • A minimum of 2 years experience in a fast-paced, high-volume all-day dining or à la carte hotel kitchen.
  • Certificate IV in Commercial Cookery or above.
  • In-depth understanding of HACCP principles.
  • Current Food Handling Certification.
  • Flexibility to work a 7-day rotating roster, including weekends, evenings, and public holidays.
  • Ability to thrive in a dynamic environment with a strong commitment to delivering excellent guest experiences.
  • Strong culinary skills across various cooking styles and techniques
  • Completed culinary qualifications and a genuine passion for food
  • Portfolio or photos of your work are welcomed and encouraged
  • Strong communication skills in English.
