Position Overview

Hotel Marvell Byron Bay is seeking a passionate and skilled Cocktail Bartender to join our team, working across our two premium venues: Horizon Rooftop Bar and the Byron Bay Oyster Bar & Seafood Restaurant. The successful applicant will showcase creativity, professionalism, and hospitality excellence while delivering an outstanding guest experience.


Key Responsibilities

  • Cocktail Creation & Service

  • Prepare and serve cocktails, wine, beer, and non-alcoholic beverages to Hotel Marvell's standards.

  • Contribute to the development of seasonal cocktail menus, with a focus on innovation and local ingredients.
  • Maintain high levels of product knowledge, including spirits, wine, oysters, and food pairings.

  • Guest Experience

  • Deliver exceptional customer service, ensuring guests enjoy a memorable and welcoming experience.

  • Anticipate guest needs and provide tailored recommendations for cocktails, wines, and food pairings.
  • Handle guest complaints or feedback with professionalism and courtesy.

  • Operational Duties

  • Set up, operate, and close bar service areas in accordance with daily procedures.

  • Ensure accurate handling of POS transactions and cash.
  • Monitor stock levels, assist with ordering, and maintain bar inventory.
  • Follow responsible service of alcohol (RSA) and all compliance requirements.

  • Team Collaboration

  • Work collaboratively with the restaurant and rooftop bar teams to ensure seamless service.

  • Support and mentor junior staff in cocktail preparation and bar service standards.
  • Attend staff briefings, training, and meetings as required.

  • Hygiene & Safety

  • Maintain cleanliness and hygiene of all bar areas in compliance with hotel and regulatory standards.

  • Adhere to workplace health and safety policies.

Skills & Attributes
  • Minimum 2 years' experience in a cocktail bar or high-end hospitality venue.
  • Demonstrated cocktail-making expertise and product knowledge.
  • Exceptional communication and interpersonal skills.
  • Strong attention to detail, with a focus on guest experience.
  • Ability to thrive in a fast-paced environment and work across multiple venues.
  • Current RSA certification (essential).

Conditions
  • Award Coverage: Hospitality Industry (General) Award.
  • Hours: Full-time position with flexible roster, including evenings, weekends, and public holidays.
  • Remuneration: As per the Award, commensurate with experience.
