About the role:
The role of the Chef de Partie is to ensure the smooth running and quality output of any given kitchen section, and that the food served is contemporary, popular and profitable.
Key responsibilities:
- Dishes are to be prepared and presented as instructed and in a manner that will be regarded as creative and different.
- Ensuring the productivity and performance of all kitchen staff
- Assisting in the correct recruiting and selecting of kitchen staff according to procedures laid down by the Sous Chef.
- Assisting with the correct induction and training of kitchen staff.
- Counselling kitchen staff with performance or attitude problems.
- Ensuring the maintenance of both high productivity and good staff morale
- Seeking from the Head Chef / Sous Chef, what exactly is expected from Kitchen Staff (job description), how to do it (training) and how they will be judged (performance appraisals)
- Being self-motivated, approachable by kitchen staff, able to follow directions and work as part of the team
- Maintaining a clean and pleasant work environment and ensuring that the next shift walks into a clean, well-organised kitchen
- Monitoring all deliveries for quality, quantity/weight, and freshness; and politely rejecting any item(s) that are not up to the agreed standard
- Ensuring superior standards of food storage, kitchen cleanliness, and kitchen safety
- Evolving systems for stock control, stock rotation and food storage
- Installing stock rotation and shelf-life criteria that will ensure maximum quality and minimum spoilage
Our ideal applicant will have:
- Certificate IV or Diploma in Commercial Cookery
- Have considerable experience and good references
- Be looking to make their next career step within the industry
- Show a strong work ethic and a "can do" attitude
- Be able to make a significant contribution to the success of the brand
- Always maintain exceptional presentation and grooming
- Have a great eye for detail and design
- Understand what it is to go 'the extra mile' for the customer
- Have a genuine interest in premium products and their delivery
- Be able to work a flexible roster including weekends, and some public holidays
