Hours: Full Time – Tuesday to Sunday (Monday day off)

About the Role:We are seeking a talented and experienced Head Sushi Chef who is equally comfortable leading a team as they are slicing sashimi. This dual role combines culinary excellence with operational leadership. You'll manage the day-to-day running of the site, maintain the highest standards of food quality and hygiene, and ensure a smooth, positive experience for both team and customers.
Key Responsibilities:- Lead sushi preparation, ensuring exceptional taste, presentation, and consistency.
- Oversee the full kitchen operation – ordering, stock management, compliance.
- Manage and train kitchen and front-of-house staff to deliver top-notch service.
- Maintain hygiene and safety standards in accordance with food safety laws.
- Drive site performance by meeting sales, waste, and labor targets.
- Collaborate with senior management on menu development and seasonal offerings.
- Represent the brand with pride, professionalism, and passion.
- Minimum 3–5 years' experience as a sushi chef, with leadership experience in a fast-paced hospitality setting.
- Deep knowledge of sushi techniques, knife skills, and seafood handling.
- Strong communication and team leadership skills.
- Proven track record in managing kitchen operations and costs.
- Passion for Japanese cuisine and exceptional customer service.
