Summary of Position:

Sherwal Mediterranean Fusion located in the iconic Queen Victoria Building is seeking an experienced Chef. Previous experience in Mediterranean/ Middle Eastern cuisine is preferable. The successful applicant will be responsible for ensuring that the standard and quality of the food production and the hygiene within the department is maintained at the highest level at all times. This role is very much hands-on, requiring attention to detail and a positive work attitude.

Key Responsibilities and Duties:

Ensuring all food is prepared as per food preparation requirements.

Preparing and assembling ingredients for menu items.

Preparing high-quality meals and food items according to company recipes.

Ensuring that food portions and food presentation meet company standards.

Preparing mise en place as required.

Storing excess food at the correct temperature in order to avoid spoilage.

Cleaning and sanitising food preparation areas.

Assisting other cooks to ensure that food orders are completed in a timely manner.

Ensuring total compliance with all relevant requirements of the Food Safety and HACCP programs.

Ensuring all procedures are maintained to high standards ie: hygiene, overall presentation of kitchen area.

Relating, supporting and working effectively with all staff, students and volunteers.

Attending staff meetings, in-service training and pursuing own professional development requirements.

Planning menus, estimating food and labour costs, and ordering food supplies

Discussing food preparation issues with Managers, Dietitians and kitchen and waiting staff

Demonstrating techniques and advising on cooking procedures

May Select and train staff

Skills and Abilities Required:

Minimum Certificate IV in Commercial Cookery and Diploma of Hospitality Management

Minimum 1 Year Full Time experience in a similar position

Passion for cooking

Punctual, organised and trustworthy

Professional appearance

Ability to manage other people

Excellent communication skills

Attention to detail

Ability to resolve conflict in a constructive manner
